All our beef is sourced from local farms and then dry-aged in a Himalayan salt chamber, this makes the meat beautifully tender and really concentrates the flavour.
The least used muscle on the carcass, and therefore the most tender, beef fillet is prized by many as the best steak cut. Larger pieces of fillet are used to make dishes such as Beef Wellington and Chateaubriand.
