We cut our stewing steak from the shoulder, and from the hind, too. We dice the beef chunky, so that it stays nice and juicy during cooking, and leave a little fat on for flavour.

Description

At Dales Butchers, we source all our beef from local farms and dry-age it in a Himalayan salt chamber for a minimum of 28 days. This really concentrates the flavour and makes sure the meat is beautifully tender.
