There’s something special about a perfectly made burger. Whether it’s the satisfying sizzle as it hits the pan, the aroma that fills your kitchen, or that first delicious bite, burgers have captured hearts and taste buds across the globe. But how did the burger become such a beloved staple of modern cuisine?
A Journey Through Time
The story of the burger begins much earlier than you might expect. Hamburgers are one of the most beloved and universal foods in modern cuisine, but their history goes far beyond fast-food menus.
The tradition of minced meat as food dates back to ancient times, notably with the Tatars, a nomadic people who would tenderise raw meat by transporting it under their saddles. This primitive technique led to the creation of what we now call “steak tartare.”
In the 14th century, this style of preparing meat made its way to Europe, and in the German port city of Hamburg, a seasoned minced meat dish developed, served cooked or smoked – known as “Hamburg steak.” The Hamburg connection gives us the name we know today.
The story took a new turn when immigrants brought this dish to America in the late 19th century. Adapted to American tastes, it evolved further. The breakthrough came at fairs and exhibitions in the early 20th century: serving the meat between two slices of bread made it more convenient and portable – a perfect fast food.
Since then, the hamburger has become incredibly popular worldwide. From traditional cheeseburgers to gourmet creations, the humble burger continues to evolve, reflecting regional flavours and local ingredients.
Ultimately, the hamburger isn’t just food – it’s a symbol of how simplicity can conquer the world.

Dales Smash Burgers
As the world of burgers is constantly changing and evolving, we’re excited to announce that we’ll soon be creating our own smash burgers at Dales! For those unfamiliar with this American technique, smash burgers are made by taking a ball of seasoned mince and literally “smashing” it onto a hot griddle or heavy pan. This creates a thin patty with crispy, caramelised edges whilst keeping the centre juicy.
The key to a perfect smash burger lies in the quality of the meat and the technique. Using our premium locally sourced beef mince, we’ll be creating these flavour-packed patties that cook quickly and develop those delicious crispy edges.
Beyond the Bun: Introducing Steak Haché at Dales
Mince doesn’t always have to be turned into a burger. We’re delighted to introduce steak haché to our range – a sophisticated French approach to minced beef that deserves a place on your dinner table.
What is Steak Haché?
Steak haché is a popular French dish that translates simply as “minced steak” or “ground beef.” It consists of high-quality beef that’s finely chopped or minced, formed into a patty, then grilled or pan-fried. Think of it as the elegant French cousin to the hamburger patty.
How is it Different from a Hamburger?
While similar to a hamburger patty, steak haché is prepared and served in a more traditional, rustic manner. In France, it’s usually served as a standalone dish, sometimes topped with a perfectly fried egg or rich gravy, without the bread that defines the classic hamburger. It’s all about letting the quality of the meat shine through.
Serving Suggestions
- Classic Français: Steak haché topped with a fried egg and served with fries
- Bistro style: With creamy mashed potatoes and seasonal vegetables
- Gourmet option: Accompanied by our mushroom or peppercorn sauce
